Cool as a Cucumber

This YogaBrain recipe is genius! Fast, simple, refreshing, YUM! 

Quick-pickled cucumbers are one of my summer favs! My mom’s recipe turned me on and of course I’ve added my own spin! And you should too.

INGREDIENTS:

White vinegar (feel free to blend apple cider vinegar as well!)
Raw organic honey
Whole garlic cloves
Pink Himalayan salt
Fresh cracked pepper

Place these to the side and grab the bowl you wanna store your quick-pickling mix in (pyrex is perfecto!)

CUT UP SOME:

Kirby cucumber (English or regular work too, use what you’ve got!)
Radish
Onion
Fresh herbs dill & cilantro — blend to taste or choose one but DILL is a must! Put it all together and what do you get? An AWESOME snack. Let it sit for at least 20 minutes and you are ready to rock and roll.

This quick-pickled cucumber salad will stay good for a few days. All of the ingredients here (with the exception of the salt, pepper, vinegar, and garlic) are from the East Falls Farmers’ Market. You can find them every Saturday here under the Twin Bridges from 10am to 2pm.
